Lemon Drizzle Cake

Ok, so since Ive been made housebound due to High Blood Pressure Ive had my baking head on...and yesterday I just fancied some lemon drizzle cake, leaves the most amazing smell in your kitchen and makes a pregnant lady very happy!

Ingredients:
  • 225g unsalted butter , softened
  • 225g caster sugar
  • 4 eggs
  • finely grated zest 1 lemon
  • 225g self-raising flour

For the drizzle:
  • juice 11⁄2 lemon
  • 85g caster sugar


Heat oven to 180C/fan 160C/gas 4

Beat together the butter and sugar until pale and creamy



Sift in the flour


then add the lemon zest and mix until well combined


add the eggs, one at a time, slowly mixing through


Line a loaf tin with greaseproof paper or a paper liner, then
spoon in the mixture and level the top with a spoon.
I had enough mix left to fill a few muffin cases too!


Bake for 45-50 mins until a thin skewer inserted
into the centre of the cake comes out clean


While the cake is cooling in its tin, mix together
the lemon juice and sugar to make the drizzle


Prick the warm cake all over with a skewer or fork, then pour over the drizzle
 the juice will sink in and the sugar will form a lovely, crisp topping.
Leave in the tin until completely cool, then remove and serve...yummie :)

Scallop Invasion

On a recent wee jaunt down the coast we decided to stop off in Portavogie for a nice seafood lunch in the Quays Bar & Restaurant (i had the scallops! delish)... at the edge of the car park there's a little trail that takes you to the beach, the trail itself is covered in scallop shells, fair enough i thought, until we got to the beach! What a surreal sight, there were scallop shells everywhere, all crammed in between the rocks and encrusting the remains of an old shipwreck like a jewelled treasure trove...

Half of all fish caught in the North Sea is thrown back overboard dead due to the current quota system imposed by the EU Common Fisheries Policy.

Support the Fish Fight Campaign to help bring an end to this senseless waste of food.

You may remember me mentioning here about going to the Killyleagh Chocolate Festival in the grounds of the gorgeous Killyleagh Castle....well just thought id share a few photos from the day...for some reason i dont have many actual photos of chocolate! but it was a gloriously sunny day filled with family cheer!

Folksy Friday #22

Chocolate...

This Sunday, Killyleagh Castle will play host to a Chocolate Festival & Family Fun Day.  The event is being organised to celebrate the 350th Birthday of Sir Hans Sloane (1660-1753) who was born in Killyleagh and, in addition to many other greater achievements, was the inventor of milk chocolate!!
So, this Sunday, I plan to be sitting in the beautiful grounds of the Castle wearing wellys and a rather fetching chocolate grin :)

Folksy Friday #6

"The Honey Monster"

I only really started to suffer from hay fever the year before last, but have had a pretty bad dose this week!  My eyes are puffy, my throat is dry and my ears are itchy......not to metion the sneezing!  Wednesday has got to have been the worst so far, really don't want to end up looking like your woman there......Piriton and Clariton just make me drowsy and even more dehydrated.... so I have been spooning the honey into me.  May be an old wives tale or just good common sense, but I was told that eating honey produced in your local area will help ease the condidtion as your body builds up a resistance to the pollen that you breathe in....works a wee bit  :/  Ive been taking glasses of hot water with a big dollup of honey in the morning, and its a great excuse for drowning your pancakes in Honey :)

So this weeks Folksy Friday is in honour of those lovely wee bumbling bees that are working hard to make me happy!

Folksy Friday #2

Magic Mushroom Soup!


Personally, I switch from loving Heston to loathing him, he can get a tad annoying for my liking, but the latest 'Chocolate Factory' inspired feast was a winner... this is what I love about him, the tiny details that look like works of art.

A few years ago I watched his Perfect Christmas Dinner (because Richard E. Grant was on it and I have a weird thing about him...but we'll say no more about that) I was blown away and jealous of the diners, its looked like they'd just stepped into Narnia!

So, the new series started with a 60's theme, with Mr Blumenthal living out his Willy Wonka fantasy, for me the best bit was the mushroom soup, he created a bowl of floating toadstools, complete with woodland aroma, dry ice and voice altering inhalers (i NEED that gas!!)


and this leads me to this weeks FOLKSY FRIDAY theme.... Toadstools :)
